Chilled Watermelon and Rosé Soup is effervescent, fruity, refreshing and the perfect slurp to stay cool this summer.Helllllllo lovelies! How goes it? How was your weekend? I certainly hope it was spectacular and filled with alllll the good summer vibes!
Ours was pretty dandy. We grilled up a storm, I worked a little less than normal (<– wahoo), and we watched a few new movies from the comfort of our cozy upstairs theater room.
One of the movies we watched was Central Intelligence. OMG, it is such a cute movie!!!
I have a crush on Dwayne Johnson so I might be a wee-bit biased. I mean, his teeth though! Have you ever seen such a pretty smile? And don’t even get me started on the color of his skin. Swoon. Yeeeeah, I totally heart The Rock. (I even forgive him for that slightly lame wrestling nickname. But I’m overly thrilled he is now super profesh and going by his real name.) So, have I ever told you guys I refuse to go to the movie theater? For real. I haven’t been to one in 10 years. TEN! I.just.can’t.
There are too many dang people. I get beyond nervous I am going to catch the flu or some virus from all that air shared with strangers. Especially if there is coughing or sneezing going on. Eeeewwww. A small part of me dies inside.
Contaminated air aside, the main reason theaters and I don’t mix is, I can’t sit still for that long uninterrupted. I need a pause button.
And at least five 10 minute intermissions. I mean, over 1 ½ hours of sitting immobile and no talking?! Sheesh. Not this girl.
As you can see, having our own theater room is a necessity of life.
We all have our quirks, and throwing a (perfectly reasonable) temper tantrum over public movie theaters is one of mine. Anyways, absolutely none of that rambling has anything to do with today’s recipe.
Other than the fact that I’d like to make this soup for Dwayne Johnson… and watch him slurp it through his perfectly white, flawlessly straight teeth. Did it just get weird up in here? I digress.
Chilled Rosé and Watermelon Soup {with Goat Cheese, Pistachios & Raspberries}
If soups in the summer aren’t your jam, you have been doing it all wrong friends. Chilled, refreshing soups during the heat of summer are where it is at… especially if you throw in a little booze!
And this soup is totally giving off all the scrumptious summer vibes.
Cool, juicy watermelon; effervescent, light rosé; sweet honey, fresh mint and a hint of mellow jalapeno spice. Quintessential summertime eats going on here, my peeps.
But, since I am a huge fan of garnishes I decided this soup deserved a little sprucing. So, I finished these fizzy bowls of yum off with a touch of creamy, decadent, crumbled goat cheese; salty, crunchy pistachios and pops of fresh, ripe raspberries.
Light, refreshing slurp-tasticness that your oh-my-gawd-it’s-SO-hot-give-me-A-C-NOW self will crave.
On top of all the noms, this soup is also stupid easy to prepare. Chop some watermelon, throw everything into the food processor and puree. Done and done.
Easy, peasy, summer soup slurping for the win!The Notes:
- I used sweet rosé in my soup, but feel free to use a brut rosé if you prefer a drier bubbly.
- If you have time, I recommend chilling your soup bowls for at least 30 minutes before serving. There is something extra special about eating cold soup from a cold bowl. It just makes it that much more refreshing.
- The soup will keep, covered and stored in the refrigerator, for up to 2 days. However, the soup is best 15-20 minutes after it is pureed. 15 minutes in the refrigerator allows the flavors to marry a bit, but the soup still retains its effervescence.
Get shorty and be cool with this Chilled Rosé and Watermelon Soup. (<– Anyone remember those movies??)… Both your body temperature and your taste buds will thank you.
Until Thursday friends, cheers – to champagne wishes and chilled soup dreams.
-xoxo-
Cheyanne

Lol – Craig and I saw Central Intelligence a few weeks ago and we’ve been sending each other the emoji series of a unicorn head, assault weapon, and donuts 😉 So I’m loving this chilled watermelon soup – it’s been warm the past few days here, and turning on the oven is the last thing I want to do! Oh and who doesn’t love a little rose with their meal?! Perfectly refreshing!
rebecca | DisplacedHousewife
Chilled summer soup — the best! Love the rosé-watermelon combination. xo
Geraldine | Green Valley Kitchen
This looks so refreshing and delicious, Cheyanne. We’re about to get hit with really high temps – supposed to be 103 degrees today – so this really appeals to me. Love watermelon – and I’ve never tried it in soup form! Hope you have a cool weekend!
Cathy | whatshouldimakefor.com
Rose and watermelon?! Um, yes please!! Totally down with a chilled soup on a hot summer day. Sounds so tasty and refreshing. And while I watch plenty of movies all cozy on my couch, I still love to catch a flick in a dark movie theater. Although if I’m booking a sitter, I’ll always choose a nice meal out, instead of a movie. I’ll have to make this soup for a movie night soon!
Miriam – londonkitchendiaries.com
We rarely go to movie theatres these days either – it is so much fun to watch movies at home with good food & a glass of wine … Just watched the trailer of Central Intelligence – looks like a fun movie! Summer finally arrived here in London (it is insanely hot!) so this soup might be just the answer 🙂
marcie
I love Dwayne Johnson too and need to see that movie! This is so creative, Cheyanne, and it looks amazingly refreshing for this hot weather we’re having here!
Kevin | Keviniscooking
Serve it up! I don’t drink alcohol, but that wouldn’t stop me from slurping up some of this deliciousness sans booze. Cheers for Summer!
Mick
Watermelon, raspberries, mint leaves, rose’….sounds tasty and refreshing!
Meghan | Fox and Briar
I hate movie theaters too! I can’t remember the last time I went to a movie. Mostly I just get super annoyed at the other patrons who are noisy or talk during the movie – movie talkers! Gah! So it is better for my general well being to stay home and make my own popcorn. This is the second time I have read about Central Intelligence, so I might have to check it out. I am so behind the times when it comes to movies these days. And wowsa Cheyanne! This soup is amazing! I am a recent rose lover, so I am all over this soup! It sounds sooo refreshing. Pinning!
Traci | Vanilla And Bean
I’ve not been to a theatre in so many years…. I don’t even remember the last time I went! Ohhh… three years ago – A Walk In The Woods.. that was it. But before then it was like 5. I don’t care for them either. First, you get ripped off with the popcorn and I ALWAYS get stuck in front of someone who is crunching or kicking my seat…. 😮 !! And there is nothing better than watching a movie in your jammies in the comfort of your own home. I’m with ya!! Ohhh I love a good, chilled soup for summer, Chey and the flavors you’ve included here are delicious! xo
Kelly
We haven’t gone to a movie theater in a while too but I would totally rather stay in and enjoy this gorgeous watermelon soup instead. It looks SO refreshing! Love the rose!
mira
Need to watch Central Intelligence! We don’t got to movies very often, I agree with you, way too many people and some of them are weird! This boozy chilled soup looks amazing! Love watermelon! Pinned!
Nicole @ Young, Broke and Hungry
Oh my! This chilled soup is the definition of summer – pass me a huge bowl please and thank you.
Ashley – The Recipe Rebel
I keep forgetting about the huge amounts of watermelon I have in my fridge. This is so perfect for it! Oh man, I would LOVE to get out and go to a movie theater! Lol. When you have kids — you will be DYING to go to a movie theater! Anything adult, alone, and in the evening is pretty special 😉
Shashi @ RunninSrilankan
So – the last time I went to a movie theatre – I was sitting next to someone who was hacking up a storm and my daughter was sitting next to someone who sniffled like her nose was running away from her – so I totally understand why a home movie theatre is a necessity of life!
And speaking of life’s necessities, I’ve been going through way too many watermelons – always in some sort of sweet juice/treat – but GAH – Cheyanne, you knocked my socks off with this recipe! Never have I ever sampled so many flavors together! I so LOVE how you paired sweet watermelon and honey with mint, jalapeno spice, salty goat cheese, and salty, crunchy pistachios! And those raspberries sure do take the cake – or should I say take the soup!
Hope you have a wonderful day and an even more wonderful weekend!
Megan – The Emotional Baker
I don’t like the movie theater either. For me, I hate being cooped up without being able to see outside for long extended periods.
On to this soup – what a genius flavor combo and so perfect for summer!!
Alice @ Hip Foodie Mom
Cheyanne, I am jamming thru things right now trying to pack but I had to stop in the comment on this soup!!!!!!!! Chilled Rosé and Watermelon Soup?!!!! OH MY GAWD, I love this! I am all about rosé in the summer so I love this! what a brilliant idea and recipe!
Jennifer @ Seasons and Suppers
Lovely soup and so pretty! We loved Central Intelligence, too 🙂
Keri @ Fashionable Foods
Watching movies at home is so much more fun! I used to love going to the theater, but seriously, the prices they charge to see a movie is outrageous! Anywayyy, this soup is beyond beautiful! What a wonderful refreshing summer soup. Anything that contains rose and goat cheese is right up my alley! Have a great week Cheyanne!
Stacey @ the sugar coated cottage
Ooh la la, how fancy and beautiful! I love cold soups in the summer and this one looks divine! I love the flavor combos here! Btw I like Dwayne Johnson to, his smile gets me every time ! Take care!
deb@glutenfreefarina
I love reading your posts. You are a hoot!. Thank goodness you don’t travel by air as much as I have to for work. That shared air would totally not work for you, I’m thinking. Not sure why I never think of cold soups. but this one sounds fabulous. And…I have everyone of these ingredients in the house. What’s easier than that?…
Mir
Movie theaters don’t bug me, but planes sure do. Talk about all that constantly recirculated air. If one person on the plane is sick, down we all go. It’s gross.
But I still fly, because you know, going places.
This soup is amazing. You pretty much had me at goat cheese, and the rose is a whole new level of yay! I’d drink and cook at the same time…
Angie@Angie’s Recipes
What a creative and beautiful soup! Perfect for summer, Cheyanne.
Ami@NaiveCookCooks

OMG…Dwayne …his smile …YES! <3 He looks better and better with age, I think 😀 Can't wait to watch the movie. Glad you had a lovely weekend, Cheyanne. Love your boozy soup!! I mean, look at it. It looks so refreshing and just beautiful. Watermelon, mint, and the fresh ginger combo is great. Pinning this! 😉
Adina
I’ve never had anything like this, you do make me curious. It looks amazing!
Cathleen @ A Taste of Madness
Wow! What a combination! This sounds like the perfect summer soup.

Dwayne Johnson? This name didn’t sound familiar so I googled it. Turned out I know this guy – I’m just horrible at remembering all these names:) And honestly, I didn’t’t care much – all this time while reading (Correction: trying to read) the post, I was basically thinking about this luscious soup and how lucky (And talented!) you are to having made and (Hopefully) eaten this #jealous! Even though my summer food list is quite packed, I’ve got to make this. Because it’s watermelon, goat cheese, pistachios, and so on (Read: Rose, Rose, and that’s enough). Amazing idea, Chey!
Denise | Sweet Peas & Saffron
I feel like we are kindred spirits! I LOVE Dwayne Johnson too, he just seems like a fun guy that I’d love to hang out with. ALSO: I haven’t been to the movie theater for probably 10 years, too, because why go to the movies with their uncomfortable seats and lack of wine when I could stay home. Hehehe. LOVE the looks of this soup, totally thought it was a smoothie bowl at first! Looks delish!
allie @ Through Her Looking Glass
Dear Chey – What a great chilled soup. This is a refreshing slurp for sure and I have an absolute ton of mint overtaking my garden. Great idea using the Rosé! I’m always wanting movie recommendations and with four kids we are pretty much relegated to at home movies. It’s more about being able to buy groceries though than the germs.. Ha ha. It is crazy expensive for a family of six to go to a movie, and then the kids suddenly need popcorn. Whaattt??? We have a ton of popcorn on the shelf at home I would be willing to pop ANYTIME, and no one is interested until they suddenly smell it at the theater. The power of suggestion. That is why we stay home. Now if I only had a theater room… a girl can dream. I will def. be watching Central Intelligence, and checking out Dwayne’s pearly whites. Thanks for the tip. (!) Have an awesome week my friend. XOXO
Olivia @ Olivia’s Cuisine
How gorgeous is this? I don’t think I’ve ever had a rose watermelon soup. So creative and perfect for the summer. 🙂
Anu – My Ginger Garlic Kithcen
Wow wow wow! What a unique soup, Cheyanne. Love watermelon and this watermelon rose soup looks like a droolicious idea my friend! Those flavour combos sound like the best thing ever, and I also love the addition of mint. And I am all up for cold treats these days, so can’t wait to give it a go.
Manali@CookWithManali
this will be perfect to cool on a hot summer day! the flavors sound very refreshing Cheyanne!
karrie @ Tasty Ever After
You know me, I’ll all about having alcohol in anything I eat, soup included, so I say “Bring on the chilled soup!!! hahahahaha! Def pinning this 🙂 It just might be the prettiest soup I’ve ever seen and your pics are gorgeous (as usual). Plus, I don’t believe you when you say you worked less this weekend because I know what you were doing Saturday morning before 11am!!! #crazy Funny about the movie theater. I don’t like going for the same reasons as you so the only one theater we go to is an IMax one where the seats are huge and spaced apart. You should try one of those 😉
Demeter | Beaming Baker
Heck YEAH for all the good summer vibes. If I could eat those vibes I would. Wait a minute. Is that what this glorious chilled rose watermelon soup is? Awesome summer vibes in consumable form? Aw, yeah! 🙂
Okay, but Central Intelligence was hella funny! Lolol. Yup, I’m lol’ing from just thinking about it. Why, oh why do I not live near you, your amazing kitchen, and that upstairs theater room? Why? He will always be The Rock to me. 🙂
Contaminated air? Lolol. Oh girl, if we went together, people would so yell at the two of us for chatting during the movie. Haha.
This soup looks amazing, perfectly bubbly and delish. Now, when can I expect you to bring some over? 😉 I promise to clean the air of contaminants first. 😉 Pinning, duh. Have an awesome week, friend! Muah. xoxo PS. YOU ROCK too! Hahahaha.
Sarah
Oh my goodness what a unique looking soup! I think it’s calling my name… and my desire to have more booze and it’s only Monday… Wonderfully creative post 🙂
Liz @ Floating Kitchen
I actually love going to the movie theater, but I haven’t been in forever. Mostly because I’m lazy. I can’t even get over this gazpacho you’ve made here. All the flavors and it’s my favorite color, too. Just gorgeous, friend!
Annie @ The Garlic Diaries
This soup looks awesome! So summery and refreshing! You were cracking me up with your aversion to the movie theatre, especially the part about not being able to sit still and be quiet for that long . I feel your pain!
Amanda
This is the soup of my dreams. Watermelon is absolutely my favorite fruit, and I lived on the stuff when I was a kid. This is so creative. And that garnish on top sounds wonderful. I never thought of pistachios and watermelon together, but I’m pretty sure I could become obsessed with that combination in about two minutes.
Rachelle @ Beer Girl Coos
Girlfriend, you know I love me a boozy summer chilled soup! This watermelon business is perfect for these hot days we are having and it’s so pretty too! I absolutely LOVE that color! I don’t do movie theaters either. I think it’s been at least 10 years for me or maybe longer – it was March of the Penguins if that tells you anything. I’m with you on the crowds and the cooties. I’m always paranoid I’m going to get lice from the chairs that never get cleaned. And it’s so dang expensive! I’d rather watch movies from the comfort of my own couch with a pause button and an adult beverage in hand.
annie@ciaochowbambina.com
Can I tell you? You have so captured the look of ‘effervescent’ in your photos! Whenever I see that word I have to stop and look because it makes me just a little bit giddy! This soup is divine! I’m beginning to realize I use that word a lot to describe your food – I just can’t help myself! Have a great day, sweets! Cheers! xoxo
Amanda
This is so amazingly creative! I’ve never had chilled soup and I have to admit that I am a little standoffish with it. I’m just used to soup being piping hot! BUT I am 100% open to trying chilled soup, I’ve just never really had the opportunity. Thank you so much for sharing!
Mary Ann | The Beach House Kitchen
As usual, over the top creative with this one Cheyanne! What an awesome idea for a summer soup! And with booze…count me in. Your photos just have me drooling and wishing that fabulous glass of delicious soup was right in front of me. I love the garnishes you’ve chosen too! Well done! Pinned!
Karen @ Seasonal Cravings
This soup looks so creative I can’t even believe it. How did you ever come up with such a cool idea? Booze and soup? Why the heck not?
Kathy @ Beyond the Chicken Coop
Ten years! That is a long time. I don’t enjoy watching movies in a theater. It used to be the seats were so uncomfortable…now it’s that I tend to fall asleep…:) I’d rather do that on my own coach! I can also eat whatever I want at home…like this watermelon soup! You know how to throw a combination together. 🙂
Dawn @ Girl Heart Food
You and me both girl being a huge fan of garnishes! All about that! Hubby and I saw Central Intelligence too and what a pleasant surprise, wasn’t it? So much more funny than I even expected. Really enjoyed it. Despite going to a theatre to watch (which we don’t often do), I would must rather watch in the comfort of home like you guys and chill in my comfy clothes with much better food! Happy you had a chill weekend 🙂 Everyone needs those every now and again, that’s for sure 🙂
Now, this soup! How perfect is this for Summer? Seriously. Plus, you have the wine all included so it’s, like, a drink and soup all in the one! Plus, it just looks so darn pretty. And, in my opinion, those awesome garnishes are definitely not optional. Pinning, of course. This one needs to happen real soon! Cheers friend! xo
Gayle @ Pumpkin ‘N Spice
I used to go to the movies ALL the time, and now my husband and I are lucky if we go once a year! I much prefer to watch in the comfort of my own home, especially nowadays when so many bad things are happening. This watermelon soup looks absolutely gorgeous, Cheyanne! I’ve seen a strawberry version before, but never one quite like this. I wish I had a big bowl of this for breakfast! 🙂 Pinned, of course! Hope your Monday is off to a great start!
Dannii @ Hungry Healthy Happy
Haha I love that you mentioned his teeth. He really does have amazing teeth!
I always think of gaspacho when I think of cold soup, but I need to try a watermelon version as that sounds amazing.
Kathryn @ Family Food on the Table
Boozy soup? You are a girl after my own heart! This sounds like a summertime must 🙂
That’s pretty funny about movie theaters.. we don’t go much these days but I do enjoy it for the big screen experience. Sounds like you have that issue totally solved with a theater room — so fun! Have a great week friend!
Vivian | stayaliveandcooking
I’m going to be honest: when I read the title of this post I was a bit confused. Wine in soup?! That’s a new concept to me! I think it could work though, I mean I trust you completely when it comes to taste… Haha! And I’m going to have to watch that movie. I’m all about the cute movies. And my weekend was pretty nice: we had a small (and very very late) housewarming on Friday so naturally I needed all of Saturday to feel a bit like myself again (I insisted on making all the bites myself, of course) and then on Sunday we did some chores and relaxing in the sun. Your weekend sounds relaxing, too!
Have a great week lady, can’t wait to see what other new flavour combo’s you’ll teach me!!
lucie
Woahhhhh Cheyanne! Those flavour combos sound like utter heaven! I love the idea of chilled watermelon, such a change from simply cutting up a watermelon and eating it straight up! Delicious!
