Ours was pretty dandy.  We grilled up a storm, I worked a little less than normal (<– wahoo), and we watched a few new movies from the comfort of our cozy upstairs theater room.

One of the movies we watched was Central Intelligence.  OMG, it is such a cute movie!!!

I have a crush on Dwayne Johnson so I might be a wee-bit biased.  I mean, his teeth though!  Have you ever seen such a pretty smile?  And don’t even get me started on the color of his skin.  Swoon.  Yeeeeah, I totally heart The Rock.  (I even forgive him for that slightly lame wrestling nickname.  But I’m overly thrilled he is now super profesh and going by his real name.) Chilled Watermelon & Rose Soup {with goat cheese & pistachios}-10Chilled Watermelon & Rose Soup {with goat cheese & pistachios}-24So, have I ever told you guys I refuse to go to the movie theater?  For real.  I haven’t been to one in 10 years.  TEN!  I.just.can’t.

There are too many dang people.  I get beyond nervous I am going to catch the flu or some virus from all that air shared with strangers.  Especially if there is coughing or sneezing going on.  Eeeewwww.  A small part of me dies inside.

Contaminated air aside, the main reason theaters and I don’t mix is, I can’t sit still for that long uninterrupted.  I need a pause button.

And at least five 10 minute intermissions.  I mean, over 1 ½ hours of sitting immobile and no talking?!  Sheesh.  Not this girl.

As you can see, having our own theater room is a necessity of life.

Other than the fact that I’d like to make this soup for Dwayne Johnson… and watch him slurp it through his perfectly white, flawlessly straight teeth.  Did it just get weird up in here?  I digress.

Chilled Rosé and Watermelon Soup {with Goat Cheese, Pistachios & Raspberries}

If soups in the summer aren’t your jam, you have been doing it all wrong friends.  Chilled, refreshing soups during the heat of summer are where it is at… especially if you throw in a little booze!

And this soup is totally giving off all the scrumptious summer vibes.

Cool, juicy watermelon; effervescent, light rosé; sweet honey, fresh mint and a hint of mellow jalapeno spice.  Quintessential summertime eats going on here, my peeps.

But, since I am a huge fan of garnishes I decided this soup deserved a little sprucing.  So, I finished these fizzy bowls of yum off with a touch of creamy, decadent, crumbled goat cheese; salty, crunchy pistachios and pops of fresh, ripe raspberries.

Light, refreshing slurp-tasticness that your oh-my-gawd-it’s-SO-hot-give-me-A-C-NOW self will crave.

On top of all the noms, this soup is also stupid easy to prepare.  Chop some watermelon, throw everything into the food processor and puree.  Done and done.

  1. I used sweet rosé in my soup, but feel free to use a brut rosé if you prefer a drier bubbly.
  2. If you have time, I recommend chilling your soup bowls for at least 30 minutes before serving. There is something extra special about eating cold soup from a cold bowl.  It just makes it that much more refreshing.
  3. The soup will keep, covered and stored in the refrigerator, for up to 2 days. However, the soup is best 15-20 minutes after it is pureed.  15 minutes in the refrigerator allows the flavors to marry a bit, but the soup still retains its effervescence.

Chilled Watermelon and Rosé Soup is effervescent, fruity, refreshing and the perfect slurp to stay cool this summer.

Ingredients
  • 5 Cups Seedless Watermelon – cut into chunks (from about 3 ½ pound watermelon)
  • ½ Lime – juice and zest
  • ½ large Jalapeno – seeded, stemmed and diced
  • 1/3 Cup Rosé *
  • ½ inch Fresh Ginger – peeled
  • ¼ Cup Packed Mint Leaves , plus more for garnish
  • 2 TBS Honey (can substitute agave)
  • Pinch of Kosher Salt
  • Optional Garnish:
  • Goat Cheese , crumbled
  • Pistachios , shelled
  • Fresh Raspberries
Instructions
  1. In the bowl of a food processor or blender, add all ingredients. Process mixture for 1-2 minutes, or until mixture is light and airy. (You may need to do this in batches if using a small blender or food processor)
  2. Taste and adjust for seasoning with salt and sweetness with honey. Transfer soup to a large container, cover and refrigerate for 15-20 minutes to allow flavors to marry.
  3. Ladle soup into chilled bowls. Garnish with mint, goat cheese, pistachios and raspberries.
  4. Serve.
Recipe Notes

*Yield: 4 Cups
*I used Sweet Rosé, but you can use any type of Rosé.
*Chill soup bowls for a few hours in the refrigerator for a more pleasant presentation and taste.
*Soup is best if eaten 15-20 minutes after it is pureed. Puree soup and place it in refrigerator for 20 minutes to allow flavors to marry, but to retain soups effervescence.
*Soup will keep, covered and stored in the refrigerator for up to 2 days. You will need to process soup again before serving.

    I keep forgetting about the huge amounts of watermelon I have in my fridge. This is so perfect for it! Oh man, I would LOVE to get out and go to a movie theater! Lol. When you have kids — you will be DYING to go to a movie theater! Anything adult, alone, and in the evening is pretty special 😉

    So – the last time I went to a movie theatre – I was sitting next to someone who was hacking up a storm and my daughter was sitting next to someone who sniffled like her nose was running away from her – so I totally understand why a home movie theatre is a necessity of life!

    And speaking of life’s necessities, I’ve been going through way too many watermelons – always in some sort of sweet juice/treat – but GAH – Cheyanne, you knocked my socks off with this recipe! Never have I ever sampled so many flavors together! I so LOVE how you paired sweet watermelon and honey with mint, jalapeno spice, salty goat cheese, and salty, crunchy pistachios! And those raspberries sure do take the cake – or should I say take the soup!

    I don’t like the movie theater either. For me, I hate being cooped up without being able to see outside for long extended periods.

    Watching movies at home is so much more fun! I used to love going to the theater, but seriously, the prices they charge to see a movie is outrageous! Anywayyy, this soup is beyond beautiful! Not sure why I never think of cold soups. but this one sounds fabulous. And…I have everyone of these ingredients in the house. What’s easier than that?…

    Movie theaters don’t bug me, but planes sure do. Talk about all that constantly recirculated air. If one person on the plane is sick, down we all go. It’s gross.
    But I still fly, because you know, going places.
    This soup is amazing. You pretty much had me at goat cheese, and the rose is a whole new level of yay! I’d drink and cook at the same time…

    Dwayne Johnson? This name didn’t sound familiar so I googled it. Turned out I know this guy – I’m just horrible at remembering all these names:) And honestly, I didn’t’t care much – all this time while reading (Correction: trying to read) the post, I was basically thinking about this luscious soup and how lucky (And talented!) you are to having made and (Hopefully) eaten this #jealous! Even though my summer food list is quite packed, I’ve got to make this. Because it’s watermelon, goat cheese, pistachios, and so on (Read: Rose, Rose, and that’s enough). Amazing idea, Chey!

    I feel like we are kindred spirits! I LOVE Dwayne Johnson too, he just seems like a fun guy that I’d love to hang out with. ALSO: I haven’t been to the movie theater for probably 10 years, too, because why go to the movies with their uncomfortable seats and lack of wine when I could stay home. Hehehe. LOVE the looks of this soup, totally thought it was a smoothie bowl at first! Looks delish!

    Dear Chey – What a great chilled soup. This is a refreshing slurp for sure and I have an absolute ton of mint overtaking my garden. Great idea using the Rosé! I’m always wanting movie recommendations and with four kids we are pretty much relegated to at home movies. It’s more about being able to buy groceries though than the germs.. Ha ha. It is crazy expensive for a family of six to go to a movie, and then the kids suddenly need popcorn. Whaattt??? We have a ton of popcorn on the shelf at home I would be willing to pop ANYTIME, and no one is interested until they suddenly smell it at the theater. The power of suggestion. That is why we stay home. Now if I only had a theater room… a girl can dream. I will def. be watching Central Intelligence, and checking out Dwayne’s pearly whites. Thanks for the tip. (!)
