We finally binge watched ‘Making a Murderer’. I know I’m late to the party, so you will have to indulge me… because, OMG.
In case you haven’t watched it yet, you absolutely need to add it to your “to-watch” list, like yesterday. Such a great documentary. But, fair warning, it might be dangerous to your health, because I’m pretty sure my blood pressure sky rocketed.
And it also might be dangerous to your trust in our justice system. I was always aware our justice system is, well, not so just, but that documentary made me feel sick to my stomach.
So, for those of you who have watched it, where do you stand? I’m nosy. I can’t say whether or not Avery is innocent or guilty, but I will say there was an abundance of reasonable doubt in that case, and I’m not sure how any sane person could have come up with a guilty verdict. Maybe the jury forgot one teeny-tiny detail: to find a defendant guilty it must be BEYOND any reasonable doubt.
One thing I can say with 100% certainty? You won’t find me moving to Manitowoc County in this life time.
After seeing MAM I had to google search some of those police, officers of the court, and attorneys to see if they still held a job “upholding” justice. I told you I was nosy. 😉 In case you are interested, this is a pretty good article.
Cinnamon Maple Chia Seed Pudding with Bananas Foster Topping
This isn’t just any ‘ole breakfast though, this is healthy meets indulgent serious breakfast business, people.
Have you hopped aboard the chia seed bandwagon yet? If you have, awesome, then you probably already know how delicious this is. If you haven’t, trust and believe this pudding is a fantastic place to start.
Chia seeds are loaded with nutrients, antioxidants, protein, omega-3 fatty acids, and almost all the carbs in them are fiber. Pretty much, they are winning in the health benefits department. You can add them as a topping to all the things… think salads, sandwiches, smoothies, etcetera.
Or, you can soak them overnight in almond milk, allowing them to get all gelatinous and plump and devour them as a pudding. A magically delicious and healthy pudding. This chia seed pudding is sweet and savory with warm, cozy cinnamon-maple undertones and those scrumptious pops of jellylike chia seeds.
But, that creamy dreamy bowl of pudding becomes epic with the addition of bananas foster on top. The bananas foster topping is sticky, boozy, crunchy, salty, nutty and adds even more cinnamon deliciousness to the pudding.
Bonus: A little FYI, just in case you are watching Making a Murderer, bananas are one of the top 5 foods to help lower your blood pressure and keep you looking young. #HeyMrTallyMan All together this pudding is like whoa for your taste buds. If you aren’t a morning person, I can guarantee waking up to a bowl (or vat) of this will have you singing a different tune. But, in case you don’t want to be a morning person, ever, this pudding makes for a delicious dessert.

Healthy meets indulgent in this easy overnight Cinnamon Maple Chia Seed Pudding with Bananas Foster Topping. Sweet and savory chia seed pudding with sticky, boozy, crunchy and nutty bananas foster make for a magically delicious breakfast, snack or dessert!
- 2 Cups Unsweetened Almond Milk
- 2 TBS Pure Maple Syrup
- 1 TBS Brown Sugar , packed*
- 1 tsp Cinnamon
- 1 tsp Vanilla Extract
- ½ Cup Chia Seeds
- Banana Foster:
- 3 TBS Unsalted Butter
- ¼ Cup Brown Sugar , packed
- 2/3 Cup Pure Maple Syrup
- ¼ Cup Rum
- ½ tsp Cinnamon
- 3 Firm Bananas – peeled and sliced into coins
- ½ Cup Walnuts - chopped
- Kosher Salt
- For the Pudding: In a large sealable jar, add the almond milk, maple syrup, brown sugar, cinnamon and vanilla extract. Pour in the chia seeds. Tightly seal the jar and shake vigorously to combine the ingredients well.
- Place jar in the refrigerator for at least 6 hours, preferably overnight.
- Make the Bananas Foster Topping: In a large saucepan melt butter over medium heat until slightly foamy. Add in the brown sugar, maple syrup and cinnamon. Stir until the sugar dissolves. Add the rum and allow mixture to come to a gentle simmer. Cook 1-2 minutes, stirring occasionally. Add in the bananas and stir to coat. Cook until slightly caramelized and softened, about 3-4 minutes. Stir in the walnuts and a pinch of salt. Cook until coated and shiny, about 1 additional minute. Remove from heat and set aside until ready to use.
- To Serve: Spoon chia seed pudding into bowls and top with caramelized bananas. Sprinkle with cinnamon and eat right away.
*I used light brown sugar, but you can use dark brown sugar.
*Chia pudding will keep, covered in the refrigerator for 2-3 days.
*Bananas foster topping will keep, covered in the refrigerator for 2 days. (Great as a topping on pancakes or waffles!)
*For a smooth, creamy chia pudding, place in a blender (after refrigeration) and blend until smooth.
