Ingredients for this cinnamon chips recipe
As promised, this recipe for cinnamon pita chips requires just a handful of ingredients:
- Pita Pockets. You can use regular or whole wheat pita breads for this recipe. However, I do recommend using the 2-ply pita pocket variety (versus the flatbread variety), as they bake up much lighter and crispier.
- Unsalted Butter and Neutral Oil. A combination of the two ensures the chips turn out beautifully buttery AND perfectly crispy. Swap: Melted coconut oil works too.
- Granulated Sugar. White sugar gives the pita chips sweet, sparkling crust as they bake in the oven. Swap: If you’re looking for a cozier, deeper flavor, use light brown sugar instead.
- Ground Cinnamon. One of the main stars of this chip show—warm, fragrant, and perfectly cozy. Swap: If your looking for the most delicious cinnamon flavor, use Saigon Cinnamon.
- Kosher Salt. Don’t skip the salt, it enhances all the flavors and brings everything to life.
Recipe variations
- Gluten-Free. Swap in your favorite gluten-free pita bread.
- Fall Cinnamon Chips. For a fall inspired twist, add a little bit of pumpkin spice or apple pie spice to the cinnamon sugar mixture.
- Churro-Style Pita Chips. Add a pinch of nutmeg and more ground cinnamon for a churro inspired chip.
- Maple Cinnamon Sugar Pita Chips. Add a little bit of pure maple syrup to the melted butter for a more robust, sweet flavor.
- Vanilla Spiced Chips. Add a small amount of pure vanilla extract to the butter mixture for inviting flavor.
- Faster Chip Hack. If you are looking for a super quick hack, cut the pita breads into wedges, place the triangles onto the prepared baking sheet, spray both sides with non-stick olive oil cooking spray, sprinkle the cinnamon sugar over the top of one side (or both if you like), and bake. HOWEVER, please note the cinnamon chips don’t turn out as crispy as if you were to brush them with oil. But, don’t get me wrong — they will still be crisp. However, it’s the softer, chewier type of crisp. I’d call this method pita bread “dippers” rather than “chips” or “crackers.”

Chef expert tips for perfect results every time
- Cut Pita Evenly. Use a pizza wheel or a sharp knife to evenly cut the pita rounds into wedges for uniform baking.
- Mix Seasonings First. Combine the cinnamon, sugar, and salt in a small bowl before sprinkling for even, balanced flavor.
- Brush Lightly, Don’t Drench. Too much butter and oil can make turn the cinnamon chips soft instead of crisp.
- Coat BOTH Side. Brush both sides with the cinnamon flavored melted butter/oil. And then ALSO sprinkle more cinnamon sugar generously over the top for the most flavor and maximum crispiness.
- Bake in a Single Layer. Overlapping chips won’t crisp properly—or at all.
- Flip Halfway. Optional, but if you’re looking for maximum crunch, flip ’em. .
- Watch Closely While Baking. Pita chips brown VERY quickly near the end of baking. Be sure to remove them from the oven when edges are golden for best texture and taste.
- Let Cinnamon Chips Cool Fully. Pita chips will continue to crisp as they cool on the pan—so let them chill out.

Can I make these with whole wheat pita?
Absolutely! Just swap out the regular pita breads for whole wheat pitas. Just note that using whole wheat pita will add a light nutty flavor to the chips.
Can I use low-carb pita?
For sure—they crisp beautifully as well.
How thin should I slice the pita bread?
If using double- or two-ply pita, be sure to separate the halves at the seams before cutting the bread into bite-size triangles (8 triangles per pita). But you can cut the triangles larger (6 per pita) or you can cut strips if you prefer. Just note, you’ll need to adjust the baking time.

Yes, you can! Air fry the cinnamon chips at 350°F for 5–8 minutes, shaking the pan halfway through air frying.

Cinnamon Sugar Pita Chips
Equipment
- 1 Large Baking Sheet with parchment paper for easy cleanup
- 1 Small Bowl
- 1 Pastry brush
Ingredients
- 3 Whole Pita Bread Rounds (SEE NOTES)
- 4 TBS Unsalted Butter or Melted Coconut Oil
- 2 TBS Granulated Sugar
- 1 ½ tsp Ground Cinnamon
- ¼ tsp Kosher Salt
Instructions
- Preheat Oven and Prep Baking Sheet: Arrange oven rack to the middle position and then close the door and preheat the oven to 350-degrees Fahrenheit. Line a large baking sheet with parchment paper for easy clean up and then set it aside.
- Mix Cinnamon Sugar: In a small bowl, combine the sugar, cinnamon, and salt and stir until fully combined.

- Prep Pitas: Place the pita breads on a clean work surface. Use kitchen shears or a Chef’s knife to split the pita pockets in half at the seams to create 2 separate, single-layered pitas. (NOTE: If you purchased the thick single-layer variety without a pocket that can’t be separated, skip this step.)

- Melt Butter, Mix with Some Cinnamon Sugar: Add the butter to a small microwave-safe bowl. Place the bowl in the microwave and nuke at 30-50% power until just melted. Add 2 teaspoons of the cinnamon sugar mixture to the melted butter. Grab a fork and stir vigorously to combine.

- Brush One Side of Pita with Cinnamon Sugar Butter, Cut into Triangles: Using a pastry brush, coat the top side of the pita breads with the flavored butter mixture. Then sprinkle half of the cinnamon sugar mixture over the butter. (Note: The cinnamon sugar mixture will settle at the bottom of the melted butter, just use the brush, and stir the butter to redistribute it.)Using a pizza cutter, Chef’s knife, or kitchen shears, cut the pita circles into 8ths to form triangles or wedges. Next, transfer the buttered pita triangles to the prepared baking sheet, arranging them in a single layer with the butter side facing down on the pan.

- Brush Top with Butter and Sprinkle with Cinnamon Sugar: Grab the pastry brush again and brush the top (bare) side of the pita breads with the remaining butter and then evenly sprinkle the remaining cinnamon sugar over the top.

- Bake Pita Wedges: Transfer the pita wedges to the pre-heated oven and bake, rotating the pan halfway through, for 9 to 13 minutes or until the pita chips are crisp in texture and dark golden in color. (Note: If you have any extra cinnamon sugar, sprinkle it over the crispy chips as soon as they get out of the oven.)

- Enjoy Cinnamon Sugar Pita Chips: Let the cinnamon pita cool on the pan before transferring to a serving platter. (Note: Chips will continue to crisp as they cool on the pan.)Serve with your favorite dessert dips, chocolate hummus, or enjoy plain.

Notes
- Pita: You can use homemade or store-bought pita breads for this chip recipe. However, I personally recommend the 2-ply pita pocket variety, as they bake up crispier.
