Since V-day is right around the corner, I thought it only appropriate to ask you guys, what’s the most romantic gesture anyone has ever done for you… or you for anyone else?Goji Berry & White Chocolate Bark_-7

Goji Berry & White Chocolate Bark_-6Obviously the most grand romantic gesture Boy has ever done for me was proposing.  We had the entire outdoor courtyard at our favorite sushi restaurant all to ourselves and there were candles and flowers on the table.  I thought we were just celebrating our anniversary until a beautiful, big ole’ platter of sushi came out and the words, “Will You Marry Me?” were written in eel sauce.  Boy declared his love with the sweetest words anyone has ever said to me, got down on one knee and proposed.

I said yes… duh.  😉

But, as thoughtful, sincere and loving as that moment was, it is honestly the small things he does on a daily basis that warms my heart.  Like, how he will ask me every day if I need him to go to the grocery store after work to pick up something blog related.  If I say yes, for example, I need a lemon, he will not only go to the store, but he will meticulously pick through the lemons for the best looking one to bring home… because he knows it matters to me.

Goji Berry and White Chocolate Bark

When I say ridiculously easy, I mean it.  This bark is lazy girl (or boy), stupid easy.  It only requires 3 ingredients and about 5 minutes of your time, making it the perfect last minute, small Valentines gift for your honey.Goji Berry & White Chocolate Bark_-96

Goji Berry & White Chocolate Bark_-58This bark is sweet, creamy, smooth and white chocolatey with pops of slightly tart goji berries.  Plus this bark is pretty – hello festively fun red and white… and sprinkles.

If you have never had goji berries before, they taste a bit like a cranberry.  They are packed with antioxidants and they have cancer-fighting qualities.  Basically they rock.  You need to add them to your grocery list and start putting them in all the things… starting with this bark.  🙂Goji Berry & White Chocolate Bark_-77Incredibly easy, only 3 ingredients and a breeze to whip together, there is no reason to not to make this bark for your loved one!  Besides, when do you get to eat chocolate and fight cancer at the same time?  Until next time friends, Cheers – to a beautiful Valentine’s Day!

This Goji Berry and White Chocolate Bark is sweet, creamy smooth, and chocolatey with pops of tart berries. It is ridiculously easy, only requires 3 ingredients and 5 minutes of your time, making it the perfect last minute addition to your Valentine's Day!

Ingredients
  • 12 ounces White Chocolate Chips
  • 3-4 ounces Goji Berries
  • Red & White Sprinkles
Instructions
  1. Cut a piece of parchment paper to 8x11’’. Place on a tray or cutting board. Arrange half of the goji berries evenly over parchment paper.
  2. Place white chocolate chips in a microwave safe measuring cup or dish. Microwave in 45 second increments, stirring in between, until chocolate is melted. Alternatively, you can melt chocolate using the double broiler method.
  3. Pour melted chocolate over goji berries and use a spatula to spread the chocolate out in a thin layer to edges of parchment. Sprinkle remaining goji berries and sprinkles over top. Transfer to the refrigerator to cool completely and set up.
  4. Cut into desired sizes and serve.

    Aww, what a sweet proposal! Especially since it involved food 😉 Funny, our first date was at a sushi restaurant too! And my hubby’s proposal a couple of years later would definitely have to be the most romantic moment of my life 🙂 I’m with you though – it’s the little everyday moments now that mean so much to me.
    Like sharing some chocolate bark. Oh my goodness. I am loving how fun and festive this is! And easy? And fast? You know that’s right up my alley – I can make this in no time while the kids are napping and have a fun treat for all of us 🙂 Cheers and happy Valentine’s Day friend!

    I tried making bark a few years ago, but it was a total fail! I am not sure what I did, but it didn’t look anything like this. I am going to give your recipe a go and hope that I am more successful this time.

    Love your proposal story, Cheyanne! I have to agree with you on both counts…my husband proposing to me was a top romantic moment, but it’s also the little things, too.     Back when I thought I was a kale smoothie girl (turns out I am so not) I bought a bunch of goji berries to add to the mix. They’ve sat lonely in my cabinet until now. Perfect way for me to use them and I much prefer them mixed with white chocolate instead of kale! Most romantic gesture from my husband? Hmmm…having a bottle of champagne sent to the table at a restaurant when I was on a girls’ trip. He said to enjoy the weekend and he had it covered at home. I love that he knows a little “me” time often makes me appreciate him more. love the eel sauce proposal btw!! a keeper for sure.

    I love this bark!!! goji berries?!!! yummm!!! The most romantic gesture anyone has ever done for me? My husband, when he proposed .. he wrote a poem, typed it on paper, burned the edges of the paper, rolled it up and put it in a bottle and had his friend “plant it”. while we were walking along the beach, I found the bottle, opened it, read it and looked up and Paul was on one knee and proposed to me! 🙂

    Can you believe I’ve never had goji berries? I know it’s like a total food blogging crime! I can only imagine how amazinggggg this chocolate bark tastes. Love it! Hmm … aside from proposing one of the most romantic things my man ever did from me happened only a few months after we’d been dating. We lived in the same town but went to separate high schools, and one day I called him from school crying because I was having a really bad day. A few hours later, after I finished swim practice, I went out to my car to see someone had left a pink rose underneath my windshield wiper blade. It had been dipped in glitter and smelled simply amazing. It’s the little things that truly warm my heart!

    Such a beautiful proposal…I love that it was food-related! And I agree, it’s the little things we do everyday that matter most! Boy’s definitely a keeper! I think the very first romantic gesture I recall from Dom was our second dinner date, he asked me to look in the glove compartment of his car for something he needed and low and behold there was a beautiful bottle of perfume…that stole my heart and then one other time he lifted me over a puddle (unexpectedly) and I thought – wow – this guys strong! He’s definitely a keeper! 😉 I love these bars, Chey! And not just because they’re simple but because they look so darn delicious! xo

    Oh my! I would have never associated eel sauce with romance before your story! I also wouldn’t have thought to put goji berries in white chocolate bark.     Wow Cheyanne, you sure got a keeper. Me too. My Jon has picked through more piles of citrus fruit to bring me the perfect one….it is indeed the little things. And I’m so appreciative too. I think the most romantic thing Jon ever did BESIDES proposing, was commissioning a water color of the place where he proposed to me: the beautiful brick clock tower at Furman University on the lake. I wish I could send you a picture. (Of the painting.) He gave it to me the Christmas after Hudson was born, with a beautiful poem he wrote catalogging our last 20 years of married ups and downs. Yup. 20. I think I cried all Christmas morning. Happy tears of course. Speaking of happy, this bark is amazing and beautiful too. I’ve never tasted Goji berries before, so that’s gotta change.     Where’s the dark chocolate??? lol! Seriously, this looks pretty damn delicious and it’s healthy with the goji berries so I can eat it every day! Boy was too cute with the eel sauce proposal. I would have said yes to that in a heartbeat. My J did the romantic thing and took me to the Don CeSar in Tampa for the weekend. He proposed on Valentine’s Day so each year this day is a little more special than normal. Reminds me of the good times. hahahaha!!

    What a sweet proposal story! One of my favorite romantic things that Kyle does is when he opens the car door for me. It’s such a simple gesture, but always makes me melt. Another that really sticks out to me was when we were in college and my childhood dog passed away – I was a MESS. I came home from class and there was a big bouquet of lilies waiting for me with a card. That totally warmed my heart. Ok enough mush and onto this beautiful bark! I want some right now!!     That was one romantic, well planned proposal! Boy set the bar pretty high! My hubby tries to do little things I would appreciate like making a side trip on the way home from work to get turnip greens from Cracker Barrel to surprise me because he knows it’s my favorite thing from them. First of all, I’m glad that you are able to eat white chocolate! I love that this candy could’t get much easier to make and it’s so pretty! Plus the goji berries are an awesome idea…I can get me little sweet pick me up and stay fit as a fiddle! 🙂

    Actually, as for you, it’s the small things that my husband does that really send me. Cleaning up when I am tired, or going to the market if i am wrung out – maybe making sure that all of the cats are taken care of. Indeed, the little things matter. He knew what would get your attention! FOOD! I’m incredibly grateful for Rob and the life we share together. I can’t imagine how my life would be without him. Rob supports me, no matter what. He goes to great lengths to make sure I have everything I need to do the work I do. The grocery store thing too… he’ll spend so much time, searching then asking store workers where this one tiny ingredient is…. that I NEED. He’ll do this on his way home from work. He even does laundry and cleans the bathroom! 😀 So I know what you mean. It’s the little things. But it feels big to those who receive. After 25 years, I am incredibly grateful. This bark is so festive Chey! From the flavors to the colors.. good stuff here! I just picked up goji berries too! Score! I love how easy this is to whip up too…. thank you for this my dear!     Sweet guy you have there! I’m with you on the day-to-day things that matter most. My husband admitted that he gets up every day and one of his first thoughts is what can he do for me that day. If only I was that good. And, I’m a huge fan of white chocolate, so I’m completely on board with this bark. Beautiful. Happy Valentine’s day…

    You definitely have a keeper, your husband sounds sweet and very romantic. I’ve never had goji berries but I keep hearing how healthy they are. With your easy recipe, there is no excuse not to try them.

    I love this! The Goji Berries make it “good for you” so no guilt right 🙂 ? Barks are one of the best and simple treats to make. You’re right, he is a keeper! Mine is always attuned to if I am stressed and will ask what he can do to help and sometimes it requires going to the store to :-). Take care!

    I love your proposal story! I can’t believe he proposed using eel sauce! He is definitely original! I’m happy you said yes too girl! And I love this white chocolate bark! I’ve always wondered what you do to still get your ‘chocolate fix’ cause you are allergic! This is perfect and I can see how you can definitely survive without normal chocolate!

    Cheyanne, that is the most adorable proposal I’ve ever heard of! Happy Valentine’s Day to you and Boy! I just love love, so reading this seriously warms my heat 😀 This recipe also makes me realise that I haven’t eaten goji berries in ages, and I miss their flavour!     I love the proposal story – so perfect for you!! I can just picture it!! Such a wonderful memory for Valentine’s Day. Can you BELIEVE I’ve never had a Goji berry?
