This Margarita Slush is an icy cold, refreshing combination of spicy and sweet flavors! If you love Pineapple Jalapeno Margaritas you’ll love this slush cocktail recipe!
Hi, friends! I hope you are ready for more Cinco de Mayo recipes, because today is a good one! I mean, you can’t have a fiesta (then a siesta) without a tequila beverage to sip. So, here’s one on me! It’s spicy, sweet and trust me, it can’t be beat.

About this margarita slush
These margaritas have a whole lot of flavor going on. They are spicy, sweet, boozy and absolutely refreshing. Taste wise, it is like an entire party, complete with a Mariachi band, in your mouth. The ginger simple syrup adds a savory, earthy, umami element, while the jalapeno spiked tequila brings the heat and the pineapple juice provides sour sweetness. When mixed together and blended with ice, they form a harmonious, balanced and seriously good drink. The slightly spicy and sweet, salt rim garnish mimics and enhances all of the flavors in the pineapple-jalapeno margarita. The mix only takes a second to prepare, yet it really completes this cocktail, so don’t leave it out. 🙂
Tips for making pineapple jalapeno margaritas to taste
Fair warning though, this margarita slushie, as written in the recipe, is not for the faint of taste buds. It is stiff. It might give you enough liquid courage to sing La Cucaracha on a table at the top of your lungs, if you aren’t careful. If you don’t like your cocktail quite so potent, there are two ways you can dilute this drink. If you want a less heady drink, but you don’t want to sacrifice flavor, simply add more pineapple juice one ounce at a time to the mixture. Or, if you want more slush and less punch, simply blend in more ice a half a cup at a time. Regardless of which addition you chose, should you chose to dull the drink, you want to add and taste until the desired flavor and/or texture is achieved.
What to serve with margarita slushies?
Jalapeno margaritas slush and Mexican food go hand in hand! Below are some of my favorite recipes to pair with a margarita.
- Chips and Dips: Queso Fundido, Restaurant Style Pico de Gallo, Roasted Corn Salsa, Grilled Green Chile Salsa
- Mexican Corn: Elote style and on a stick or even creamy Mexican corn dip!
- Tacos: Easy Black Bean Tacos, Baked Chicken Buffalo Tacos
- Fajitas: Skirt Steak Fajitas, chicken fajitas or even shrimp!

Pineapple, Jalapeno & Ginger Margarita Slushie
Ingredients
- Margarita Slushie Mix:
- 1 Jalapeno – sliced into rings
- 4 oz Tequila
- 2 oz Triple Sec
- 2 oz Lime Juice
- 2 oz Pineapple Juice
- 3 Cups Ice (about 10-12 oz.)*
- Ginger Simple Syrup:
- 1 ¼ Cup Water
- 2 ½ oz Ginger – peeled and sliced into ¼’’ pieces
- 1 ¼ Cup Sugar
- Salt Rim Garnish:
- 1 TBS Granulated Sugar
- 1 tsp Coarse Salt
- Dash Cayenne
- Lime Juice – for the rim
- Drink Garnish:
- Fresh Pineapple – Cut into wedges
- Jalapeno - sliced into rings (*use leftover rings from above)
- Lime - sliced into rings or wedges
Instructions
- For the Margarita Mix: Combine the jalapeno flavored tequila, triple sec, lime juice, pineapple juice and 6 ounces of the ginger syrup together in a tall, freezable container with a tight fitting lid. Place container in the freezer for at least 8 hours, and up to one week.
- Make the Jalapeno flavored Tequila: Muddle 3 slices of jalapeno rings with tequila in a shaker. Allow to sit at least 5 minutes up to one week. When ready, strain tequila and discard jalapeno*.
- Make the Ginger Simple Syrup: Bring all syrup ingredients to a boil in a small saucepan. Remove from heat immediately and allow to sit, off heat, for 30 minutes or until cooled. Use an immersion blender to puree syrup. Transfer to a fine mesh strainer set over a large bowl or container and strain. Transfer to a jar or container with a tight fitting lid. Set aside or refrigerate until ready to use.
- Prepare the Salt Rim Garnish: Combine the sugar, salt and cayenne together in a small ramekin or bowl, stir to mix. Set aside.
- When ready to serve: Dip the rim of the margarita glass in lime juice. Roll rim in the salt garnish.
- Place the cocktail mix and ice in a blender. Blend until desired “slushie” consistency. Pour margarita slushie into salt rimmed glass. Garnish with pineapple, jalapeno and lime wedges. Enjoy.
Notes
*The margarita cocktail mix will be very STRONG. It will mellow once blended with the ice. Add more ice to the blender for a weaker margarita.
*The ginger simple syrup will keep, tightly covered, in the refrigerator for up to 10 days.

Taylor- Too funny because I have not let go of Cinco de Mayo yet either!! I’ve been eating mexican food left and right! And still drinking these slushies 🙂 The mix keeps great in the freezer. So I made a huge batch, put it in a large container, and have it stored in my freezer. When I get an urge for a spicy boozy slushie, I simply blitz in a little ice and viola!
