I personally like to briefly pulse them in a food processor. However, you can dump the pretzels into a zip-top bag, seal, and crush them with a rolling pin if you prefer. Just make sure you aim for coarse to fine pretzel crumbs.

  • Overcrowded Pan. You’ll want to pan-fry the chicken in batches to prevent overcrowding the skillet. Overcrowding will trap steam and lower the temperature of the oil, creating sad chicken.
  • Refrigerated Chicken While Warm. If you’ve got leftovers, let them cool completely before storing. Storing and refrigerating the chicken while still warm will trap steam and soften the crust. 

How do I keep the crust from falling off?  

Be sure to use paper towels to pat the chicken as dry as possible before dredging in flour. And, be sure to use your fingers to press the pretzel crumbs firmly onto the surface of the chicken.

Can I bake this pretzel chicken recipe instead of frying?

Yes, you sure can. Spray the pretzel encrusted cutlets well with non-stick cooking oil and place on a wire rack-lined sheet pan. Yes, I actually prefer the air fryer to the oven, if you’re looking for an alternative method. Simply spray the coated chicken well with oil and air fry at around 400°F, flipping halfway. And, just note, the chicken will be a little less crispy than when shallow-fried.

Kind of! While the chicken is best enjoyed when made fresh, you can prep portions of this recipe in advance. Crush the pretzels and prepare the honey mustard sauce in advance’ however, I recommend breading the chicken shortly before cooking. However, if you enjoy leftovers, you can reheat the chicken to re-crisp it.

  • 1 Clean Cutting Board – with Chef Knife (for making chicken cutlets)
  • 3 Shallow Bowls (for breading stations)
  • 1 Large Rimmed Baking Sheet – with wire rack (for holding chicken)
  • 1 12-inch Cast Iron Skillet or Non-Stick Frying Pan (for pan frying pretzel chicken)

Ingredients 

Instructions

  • Cut Chicken into Cutlets: Place the chicken breasts on a clean work surface.
    Working with one chicken breast at a time, use a sharp knife to half the chicken crosswise to separate the tail end from the top half.
    Put the thin tail end aside and use the knife to cut and butterfly the thick side of the chicken breast in half, horizontally, to make 3 chicken cutlets from one chicken breast.
    Repeat the cutting process with the other chicken breast to make a total of 6 cutlets.

  • Pound and Season Chicken Cutlets: Arrange the chicken breasts in a single, evenly spaced on your cutting board and cover the chicken with a large piece of plastic wrap.
    Working with one cutlet at a time, use a meat mallet or rolling pin to lightly pound out all the chicken cutlets to a uniform ¼-inch thickness.
    Season both sides of the cutlets lightly with kosher salt and ground black pepper. Then, set the chicken cutlets aside.

  • Crush Pretzels: Place the pretzels into the bowl of a food processor and pulse until the pretzels resemble panko breadcrumbs.
    (Note: Avoid leaving any really large chunks as they won’t adhere to the chicken, but also avoid pulverizing the pretzels into a dust. If you’re nervous, do this in a few batches.)

  • Prepare Dredging Station: Grab 3 shallow bowls or pie plates to set up your dredging station.
    a. In the first bowl, add all the flour and season with 1 teaspoon onion powder, 1 teaspoon garlic powder, ½ teaspoon of each paprika, ¼ teaspoon cayenne, ½ teaspoon of salt, and ¼ teaspoon black pepper. Then, whisk to combine.
    b. To the second bowl, strain in the whisked eggs (optional), season with a pinch of salt and pepper, then use a whisk to beat the eggs together.
    (Note: Using a fine-wire mesh strainer to strain the eggs is optional. However, it does yield a smoother, restaurant-quality pretzel crust.)
    c. In the last bowl, add the crushed pretzels, breadcrumbs, remaining 1 teaspoon onion powder, 1 teaspoon garlic powder, ½ teaspoon of both paprikas, and ¼ teaspoon cayenne. Use a fork or whisk to thoroughly combine the ingredients.
    d. Set a piece of parchment paper on a rimmed baking sheet and set aside.

  • Crust Chicken in Pretzels: Working with one cutlet at a time:
    a. Flour: Use your right hand to pick up the chicken cutlet and add it to the bowl of flour. Switch to your left hand and add it to dredge the chicken in the flour to evenly coat the chicken. Switch hands again and use your right hand to pick up the chicken cutlet and shake off any excess flour.
    b. Egg: Then, add the cutlet to the bowl with the eggs. Using your left hand, turn the chicken over in the eggs until evenly coated in the eggs.
    c. Pretzel Mixture: Still using your left hand, add the cutlet to the bowl with the seasoned pretzel breadcrumbs. Using your right hand, grab a handful of pretzel mixture and scatter them on top of the cutlet. Then, using your right hand still, press the pretzels into the chicken before turning the chicken over several times and pressing the chicken into the crumbs to evenly coat.
    d. Transfer the breaded chicken cutlets to the parchment lined baking sheet before repeating the process with the remaining 3 cutlets.

  • Pan Fry Pretzel Cutlets: Before proceeding to cooking the pretzel cutlets, set a wire rack onto a baking sheet.
    Heat 1/3 cup of oil in a 12-inch cast-iron or non-stick pan over medium to medium-high heat.
    Once the oil is hot (350-degrees Fahrenheit), give the pan a swirl to evenly coat the bottom of the skillet in the oil. Working with 2 cutlets a time, carefully add them to the hot oil. Cook for 2-3 minutes, or until the bottom side is golden brown.
    Using tongs, carefully flip the chicken and cook for 2-3 minutes longer, or until the chicken is golden brown all over and cooked throughout.
    Using tongs, carefully transfer the crispy pretzel chicken cutlets to the wire rack and season lightly with salt and pepper.
    Add 2-3 more tablespoons of oil to the same pan and repeat the cooking process with the remaining cutlets.
