- 1 Large Rimmed Baking Sheet – with parchment paper
- 1 Large Mixing Bowl

- 1 ¾ Cups Mixed Raw Nuts – un-toasted, unsalted; any combination (I use cashews, whole almonds, and pecan halves) (SEE NOTES)
- 2 ½ TBS Unsalted Butter – melted
- 3 TBS Dark Brown Sugar – packed
- 1 heaping tsp Ground Cinnamon
- ½ tsp Cayenne Pepper – to taste; use ¼ tsp or less if you don’t like spicy
- ¼ heaping tsp Ground Ginger
- 1/8 tsp Nutmeg
- 2 TBS Pure Maple Syrup
- 2 Cups Pretzels
- 2 tsp Flakey Sea Salt or Kosher Salt
- Optional to taste Turbinado Sugar
Instructions
- Preheat Oven and Prep Pan: Arrange the oven rack to the center position and then preheat the oven to 350-degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy clean up.
- Roast Nuts: Spread the nuts out evenly on the baking sheet and roast in the preheated oven for 5 minutes. Remove and stir the nuts. Return to the oven and roast for 5 more minutes.
- Meanwhile, Flavor the Butter: To a large bowl, add the melted butter, brown sugar, cinnamon, cumin, cayenne, and maple syrup. Grab a whisk and vigorously stir until the ingredients are fully combined. Then set aside. (Note: If the butter hardens while the nuts are still roasting, just gently warm it in the microwave on 50% power until it returns to a liquid state.)
- Add Warm Nuts to Butter: Add the warm roasted nuts to the bowl of butter. Use a rubber spatula and stir the nuts until they’re fully coated.
- Add the Pretzels and Salt: Place pretzels and salt into the bowl and then stir until fully coated.
- Roast Snack Mix: Dump the nut and pretzel mixture back out onto the prepared baking sheet and spread it out into an even layer, using the rubber spatula to scrape all the flavorful butter sugar mixture from the bowl and pouring it over the pretzels and nuts. Transfer to the preheated oven and bake for 15-18 minutes, stirring once during baking at the 7- or 8-minute mark. OPTIONAL: After stirring at the 7- or 8-minute mark, sprinkle a little turbinado sugar, to taste, over the pretzel and nut mixture and then return to the oven to continue roasting. I use about 1/2 to 1 teaspoon.
- Cool Pretzel Mix: Place the pan onto a wire rack and let the snack mix cool completely, tossing the mix a once or twice during cooling to prevent sticking.
- Enjoy Spiced Pretzels: Transfer the pretzel and nut snack mix to a serving bowl and enjoy. Alternatively, store the mix in an airtight container at room temperature for up to 1 week.
