It’s the MOST wonderful time of the yeaaaar, because it is POPSICLE WEEK!!

The second greatest week of summer!!

Just so we are clear, next week is officially the greatest week of summer.

And it’s not because of the dang fourth of July. 😝

It is because next week is mahhh BIRTHDAY!

Strawberry Kiwi Mojito Boozy Popsicles

Aka POPTAILS!!!!

Sorry for yelling, but COCKTAILS IN POPSICLE FORM?!?

Tart, sweet, refreshingly cool and perfectly boozy popsicles with a hint of fresh mint and big ‘ole pieces of sliced, fabulously fresh kiwis and strawberries.

These poptails are straight up SUBLIME, friends.

I mean, booze + fruit in frozen popsicle form*?

It’s a no brainer life win for your face, yall.

Notes, tips and tricks for Strawberry Kiwi Mojito Boozy Popsicles recipe:

  1. The recipe for Strawberry Kiwi Mojito Boozy Popsicles below yields approximately 10 popsicles, but it will depend on the size of your mold and how much sliced, fresh fruit you add.
  2. Using a small pitcher or measuring glass with a spout will make it much easier to pour the mojito mix into the popsicle molds!
  3. I recommend filling each mold about ½ to ¾ full, then add your sliced fruit and fresh mint, and then fill the mold with the remaining mojito mix.
  4. If you find you don’t have enough mojito mix to completely fill all the molds, either add more fruit or add a bit of club soda to the molds to top them off.
  5. If you aren’t a fan of alcohol, or you want to serve these to kids, simply omit the rum and substitute club soda instead!
  6. I like to let my popsicles sit in the freezer for one hour or so before I add the sticks. I find partially freezing the popsicles before adding the sticks helps the sticks stand up straight versus tilted and lopsided.
  7. If you have a hard time removing the popsicles from the mold, run the sides of the mold under room temperature water for 30 seconds or so.

How to make Strawberry Kiwi Mojito Boozy Popsicles at home 👇

Strawberry Kiwi Mojito Boozy Popsicles

These Strawberry Kiwi Mojito Popsicles are tart, sweet and refreshingly cool with a hint of mint, a touch of boozy rum, and pops of sliced fresh strawberries and kiwis! Put down the cocktail, and turn your mojito into a poptail instead!

Ingredients 

Instructions

  • In a small saucepan, combine the sugar and water. Bring to a boil over medium heat and cook until sugar is completely dissolved (this should happen pretty quickly). Stir in the mint leaves, remove from heat and let steep until the mint syrup is completely cooled to room temperature.
  • Strain the mint and transfer the simple syrup to a large pitcher or measuring glass*. Add in the lime juice and rum. Whisk until combined.
  • Pour the mixture into popsicle molds, filling each mold about 3/4th full. Add a mint leaf and slices of strawberries and kiwis to each mold. If the fruit doesn’t fill the mold all the way to the top, either add more fruit, or add a bit of club soda.
  • Place the molds in the freezer and freeze for 1 hour. Remove the molds and insert wooden sticks. Place the molds back in the freezer and freeze for at least 4 hours, preferably overnight.
  • Remove popsicles from molds and enjoy. If you have a hard time removing the popsicles, run the sides of the mold under warm water for 10 seconds or so. Enjoy!
