Happy almost weekend!

Today I am going to keep things relatively short… but, for good reason.

If you loyally follow (and actually read) this blog, you know Boy and I recently moved into our brand spankin’ new, forever (until retirement) home.

Well, today the fence is FINALLY being installed! Wahoo!

Even though we just moved in 3 weeks ago, we have been waiting on the fence installation for twelve weeks.

TWELVE.

As in roughly 2 ¾ months.

I couldn’t be more excited the fence is finally here, but I’m also very easily distracted. And right now men are banging away in my backyard while my fur-child is running around howling like a lunatic. Obviously the current environment isn’t the most conducive for my productivity.

Ya heard?

So instead of all the chit chat, let’s simply quench our #ThirstyThursday thirst with popsicles.

About these boozy popsicles

Aka G&T POPTAILS.

Basically these popsicles are your classic gin and tonic cocktails gone gloriously rogue.

Fruity, sweet and sour with smooth nuances of tropical mango, a hint of boozy gin and tonic vibes and magnificent, big ‘ole slices of sweet strawberries.

Refreshing, vibrant, and doubling as cocktails AND dessert, these popsicles are how you WIN at LIFE.

… Or at least win at #ThirstyThursday. 😉

Tips for the best Strawberry Mango Gin and Tonic Boozy Popsicles

  1. The recipe below calls for 2 cups of peeled and cubed mango, which is roughly 2 average sized mangoes. While I highly encourage you to use fresh, ripe mangoes you can absolutely substitute frozen mango cubes if desired.
  2. You can use any kind of tonic water you would like. I typically use diet tonic water in my popsicles. If you are more of a Gin Rickey lover, substitute club soda for the tonic!
  3. Lime Juice Cordial is simply sweetened lime juice. You should be able to find it in your local grocery store near the mixers, juice or grenadine. I’ve used this one before. But, if you can’t find it, don’t want to buy it, or simply want to make it yourself (<– High five for you!), I have included how to DIY in the notes section of the recipe below.
  4. I recommend dividing half the strawberry slices between the popsicle molds, pouring the mango cocktail mix into the molds, and then dropping in the remaining strawberry slices. Layering the strawberries in steps will help keep them suspended and prevent them from all sinking to the bottom.
  5. The recipe below yields approximately 8-10 popsicles. It will largely depend on the size of your popsicle mold and how many strawberry slices you add to each. I added about 4 slices of strawberry to each mold and ended up with 9 popsicles.
  6. If you have a hard time removing the popsicles from the mold, run the sides of the mold under room temperature water for 30 seconds or so.

One of the best things about these fruity, boozy popsicles is that they pair terrifically with a wide variety dishes. From American barbecue, to Caribbean dishes, and Mexican favorites, or Hawaiian recipes, these pops pair great with it all.

Strawberry Mango Gin and Tonic Boozy Popsicles

These Strawberry & Mango Gin and Tonic Popsicles are a tropical, frozen twist on the classic G&T!  Sweet, sour and bodaciously boozy, these poptails are the perfect way to cool off after a long, hot summer day!

Ingredients 

  • 2 Cups Ripe Mangos – peeled and cubed (about 2 mangos)*
  • 8-10 Fresh Strawberries – thinly sliced
  • ¼ Cup Gin
  • 1 Cup Tonic Water*
  • ¼ Cup Lime Juice Cordial*

Instructions

  • In a blender, combine cubed mango with gin, tonic and lime juice cordial. Blend until completely smooth.
  • Divide half the strawberry slices between popsicle molds.
  • Pour the mango cocktail mix into popsicle molds and fill with remaining slices of strawberries.
  • Transfer molds to freezer and freeze for 1 hour, or until just slightly firm.
  • Remove molds and insert a popsicle stick into the center of each mold.
  • Return molds to the freezer and freeze until completely firm, about 4+ hours.
  • Remove popsicle from molds* and enjoy!

Notes

Homemade Sweetened Lime Juice (Yield: enough for roughly 4 cocktails)
1/2 Cup Water
1/2 Cup Sugar
2/3 Cup Lime Juice
  1. In a small saucepan, combine the water and sugar. Bring to a gentle boil, whisking constantly.  Boil just long enough for the sugar to dissolve.
  2. Remove from the heat and let sit until it reaches room temperature.  Stir in the lime juice transfer to a covered container and store in the refrigerator until ready to use.
