Apple Cinnamon Waffles with Bourbon Maple Syrup

These Apple Cinnamon Waffles are crisp on the outside and tender on the inside with notes of warm cinnamon, sweet brown sugar and pops of grated apple. Topped with a buttery, rich, boozy bourbon maple syrup these waffles are the epitome of fall!

Ingredients
  • Waffles:
  • 1 ½ Cups All Purpose Flour
  • ¼ Cup Cornstarch
  • 2 tsp Baking Powder
  • ¼ tsp Salt
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • ¾ Cup Apple , skin on – grated*
  • 2 TBS Light Brown Sugar , packed
  • 2 large eggs , separated
  • 1 ¼ Cup Buttermilk
  • 2 TBS Vegetable Oil (can substitute unsalted butter, melted)
  • 1 tsp Vanilla Extract
  • Bourbon Maple Syrup:
  • 1 Cup Maple Syrup
  • ½ Cup Bourbon *
  • 1 TBS Unsalted Butter , softened
  • Pinch Salt
  • Caramelized Cinnamon Apple Topping (optional)*
Instructions
  1. For the Bourbon Maple Syrup: Melt butter in a small saucepan over low heat. Add maple syrup, bourbon and a pinch of salt. Bring to a boil over medium high heat and immediately reduce heat to low to maintain gentle simmer. Let simmer for at least 5 minutes. Remove from heat and set aside.
  2. For the waffles: Preheat your waffle iron. Preheat oven to 225 degrees F to keep waffles warm. Place a wire rack insert on a large baking sheet and set aside.
  3. In a large bowl combine flour, cornstarch, baking powder, salt, cinnamon and nutmeg. Stir together. In a small bowl toss together the grated apples and sugar. Set aside.
  4. In a separate mixing bowl combine the egg yolks, buttermilk, oil and vanilla extract. Whisk to incorporate thoroughly. Using your hands or a tea towel, gently squeeze excess moisture out of apples and add them to yolks. Gently stir to combine.
  5. Make a small well in the center of the dry ingredients (flour mixture) and add yolk mixture to well. Stir until JUST combined (the mixture should still be lumpy).
  6. In a separate small bowl, beat egg whites until stiff peaks form. Gently fold the egg whites into the flour/egg yolk mixture until the egg whites are barely combined, making sure NOT to overmix.
  7. Spoon about 1/3 cup batter into preheated waffle iron*, making sure not to overfill. Cook according to waffle iron manufacturer’s instructions. Remove cooked waffles to wire rack and keep warm in the oven while you repeat with remaining batter.
  8. Serve waffles with bourbon maple syrup, caramelized apples* (if using) and an extra sprinkling of cinnamon. Enjoy!
Recipe Notes

*If you use a tart apple, add an additional tablespoon of brown sugar to the recipe.
*3/4 cup grated apple is about 1 small apple.
*If you want a less pronounced bourbon flavor, only use ¼ cup bourbon in the maple syrup.
*Spray your waffle iron with non-stick cooking spray before adding batter if manufacture instructs you to do so.
*Caramelized Cinnamon Apple Topping:
1 ½ TB Unsalted Butter
2 TB Light Brown Sugar, packed
¼ tsp Cinnamon
2 Apples – peeled, cored & cut into wedges
1 tsp Lemon Juice
Directions:
1. Melt butter in a medium sauté pan over medium-high heat.
2. Add cinnamon and sugar and stir until melted and combined, about 30 seconds.
3. Add apples and cook, stirring occasionally, until soft and tender, about 7-10 minutes
4. Stir in lemon juice and transfer to a clean bowl.
