In a large bowl, mix together the cream cheese with the sour cream until combined.
Add in the chicken, bacon, celery, shallots and everything bagel seasoning. Stir to combine.
Taste and adjust for seasoning with salt, pepper, and more everything bagel seasoning if desired.
For the best results, transfer the chicken salad to the refrigerator for a couple of hours to let the flavors develop.

To quickly shred cooked boneless skinless chicken (breasts or thighs), place warm chicken in a large bowl and use a hand mixer (or stand mixer) on low. Or, add it to the bowl of a food processor and pulse until shredded.
Whipped cream cheese has a lighter, fluffier texture than traditional block cream cheese. It lends a better texture to the chicken salad, but you can use block cream cheese if desired. Regardless, make sure your cream cheese is at room temperature for easy mixing!
The amount of everything bagel seasoning in your chicken salad entirely depends on personal preference. Just like seasoning with salt and pepper, make sure you are seasoning your chicken salad with everything spice to taste!
In a large straight-sided pot, arrange chicken in a single layer. Add the onion, garlic and fresh herbs (if using). Season generously with salt and pepper.
Cover the chicken and aromatics with lemon juice and enough cold water (and wine if using) to cover the chicken by about an inch. Bring to a boil over medium-high heat. Reduce the heat to low, cover, and cook for 9-12 minutes, or until chicken is cooked through (an instant-read thermometer should register 165 degrees F.).
