Instructions
Cook beans and garlic: Empty the can of white beans and their liquid into a microwave-safe bowl. Add the clove of garlic and cover with a lid, leaving the lid slightly cracked open on the side to form a vent. Place the bowl in the microwave and heat on high power for 4-6 minutes, or until beans are very soft. Drain beans and garlic clove, reserving all the liquid. Set everything aside. (Tip: This step is optional; however, it is one of the keys to creating a super smooth dip or spread for bagels. Note: Cook time will depend upon the strength of your microwave. You can also do this on the stove-top in a small saucepan if you prefer.)
Start everything bagel dip: Pour 6 TBS of aquafaba (reserved bean water) into the bowl of a food processor or high-speed blender. Add the garlic clove, tahini, and lemon juice. Season with ½ to ¾ teaspoon salt and generous pinch of black pepper. Process for 1 minute. Stop and use a rubber spatula to scrape down the sides and the bottom of the bowl. Continue to process for an additional minute, or until the mixture is smooth in consistency. Scrape the sides and bottom of the bowl again.
Add cream cheese: Add the soft cream cheese cubes to the bowl. Process until the mixture is very smooth, about 1 ½ minutes. Scrape down the sides and the bottom of the bowl.
Add white beans: Add the softened beans to the bowl. Process the mixture for 3 minutes. Stop and scrape down the sides and bottom of the bowl. Continue to process for an additional 3-4 minutes, or until a super-smooth, ultra-creamy spread forms. Adjust for consistency: Taste the bagel dip and adjust the texture as needed - adding more aquafaba or cold water to thin the dip out. Alternatively, you can adjust the consistency using the following: extra virgin olive for a richer flavor and lemon juice for tarter flavor.
Add everything bagel seasoning: Add 1 ½ tablespoons of everything bagel spice to the bowl and stir or pulse to combine. Taste the bagel dip again and adjust as needed - adding more everything bagel seasonings and salt for flavor, and lemon juice for acidity.
Serve: Transfer the dip to a serving bowl or plate. Garnish with more bagel spice and gravlax if using. Serve with crudité and crackers; bagels and English muffins; pita chips, bagel chips or pretzels; on wraps and sandwiches; or however your heart desires!

Storage:
Dip will keep in a clean, airtight container in the fridge for up to a week.
It can also be frozen for up to 3 months. To use, defrost overnight in the fridge.
