Fresh, vibrant, and loaded with bold Asian flavors, this Soba Noodles and Chicken Bowl is the kind of recipe that makes you feel like a weeknight dinner hero — without breaking a sweat. Think slurpy soba noodles, juicy chicken, crisp veggies, and gorgeously-glossy, sesame-forward dressing that perfectly clings to every single bite.
Prepare Soba Noodles: Cook the dry soba noodles to *barely* al dente in boiling, salted water according to the instructions on the back of the package. Once almost al dente, immediately dump the noodles into a colander and rinse with cold water to stop the cooking process. Then drain the noodles well and add them to a large mixing bowl. Drizzle 1 tablespoon of sesame oil over the noodles, toss to coat, and then set the bowl aside.
Meanwhile, Make the Sesame Dressing: To a glass measure or medium mixing bowl, add the vegetable oil, soy, vinegar, remaining 1 ½ tablespoons sesame oil, tahini, honey, ginger, and garlic. Season with a heaping ¼ teaspoon kosher salt and a scant 1/8 teaspoon black pepper. Grab a whisk and vigorously stir until the dressing is emulsified. Then, grab a spoon, taste the dressing, and adjust the flavors to suit your tastebuds before setting the dressing aside.
Combine Soba Bowl Ingredients: To the bowl with the cooked soba, add the shredded chicken, carrots, edamame beans, scallions, and cilantro.
Add Dressing and Toss Soba with Chicken: Pour half the dressing over the soba, chicken, and veggies. Then toss well to combine and coat. Add more dressing as needed to suit your preferences.
Garnish and Serve Soba Noodles and Chicken: Garnish the top of the soba chicken bowls with toasted nuts, sesame seeds, and more cilantro, if using. Serve with lime wedges and the remaining dressing on the side. Enjoy!
