Healthy meets indulgent in this easy Banana Overnight Oats with Chia Seeds and Bananas Foster Topping! Creamy no-cook oatmeal with a sticky, crunchy banana topping, these oats are perfect for breakfasts and snacks on the go!
1CupMilk(or milk alternative, such as almond milk)
1TBSPure Maple Syrup
1TBSBrown Sugar- packed*
1TBSCreamy Peanut Butter(or any creamy nut butter)
1tspCinnamon
1/2tspVanilla Extract
Kosher Salt- to taste
1/2 CupRolled Oats
2TBS + 1 tspChia Seeds- leveled
Bananas Foster Topping:
3TBSUnsalted Butter
2/3CupPure Maple Syrup
¼CupBrown Sugar- packed
½tspCinnamon
3tspReal Rum Extract*
1 tspVanilla Extract*
3mediumFirm Bananas– peeled and sliced into coins
½CupWalnuts- chopped
Instructions
For the Oats: In a large sealable jar, add the milk, maple syrup, brown sugar, peanut butter, cinnamon, vanilla extract and pinch of salt. Pour in the oats and chia seeds. Tightly seal the jar and shake or stir vigorously to combine the ingredients well.
Refrigerate: Place jar in the refrigerator for at least 6 hours, preferably overnight.
Make the Bananas Foster Topping: In a large saucepan melt butter over medium heat until slightly foamy. Add in the maple syrup, brown sugar and cinnamon. Stir until the sugar dissolves. Add the extracts (or real rum) and allow mixture to come to a gentle simmer. Cook 1-2 minutes, stirring occasionally. Add in the bananas and stir to coat. Cook until slightly caramelized and softened, about 3-4 minutes. Stir in the walnuts and a pinch of salt. Cook until coated and shiny, about 1 additional minute. Remove from heat and set aside until ready to use.
To Serve: Spoon overnight oats into individual jars or bowls and top with caramelized bananas. Sprinkle with cinnamon and eat right away.

Notes
I used light brown sugar, but you can use dark brown sugar.
You can use any type of milk or alternative milks, such as almond or coconut milk, to make these oats. If you are looking for a milk substitute, you can also use thinned out yogurt or keifer!
Overnight oats will keep, covered in an airtight container in the refrigerator, for up to 5 days.
Bananas foster topping will keep, covered in the refrigerator for 2 days. (Great as a topping on pancakes or waffles!)
For a smooth, creamy oats add ½ cup frozen sliced banana and place in a blender (after refrigeration). Blend until smooth.
