1CupKey Lime Juice(substitute: fresh lime juice or lemon juice)
1CupStrawberry Vodka- CHILLED
1CupChampagne- CHILLED (substitute: Sparkling Wine, Prosecco, or Rosé)
ForServing:Ice Cubes or Crushed Ice
Optionalfor Garnish:Fresh Berries or Fresh Strawberries, Key Lime Wedges, Fresh Mint Leaves
Instructions
Make Simple Syrup: Combine water and sugar in a small saucepan and place over high heat. Bring to a boil. Cook until water turns clear. (This should happen immediately). Remove from heat.
Steep Strawberries in Syrup: Add strawberries and let seep in sugar water (simple syrup) for at least 20 minutes, or until syrup is room temperature.
Blend Strawberry Syrup: Use an immersion blender to puree strawberry simple syrup, or transfer syrup to a blender to puree. Transfer to a fine mesh strainer placed over a large glass measure, bowl, or container and strain the syrup, discarding all the strawberry seeds in the strainer.(Note: If you don't have a blender you can simply muddle the strawberry syrup.)
Mix Drink: To the glass measure with the strawberry simple syrup, add the key lime juice and strawberry vodka.
Pour Cocktail: Fill drink glasses 3/4th full with ice cubes. Evenly divide the strawberry vodka mixture among the glasses. Top with champagne.
Garnish and Serve: Garnish the glasses with fresh strawberries and lime wedges, if using. Enjoy strawberry vodka drink immediately.
Notes
Storage: You can batch this cocktail recipe and store it in the refrigerator for up to 3 days. However, DO NOT add the champagne or ice until just before serving.
