This sweet and salty White Trash Chex Mix recipe is deliciously fool-proof, made with just a few simple ingredients and ready in a matter of mere minutes! Instructions
Toss Chex Mix: In a large bowl, gently toss together the Cheerios, both types of Chex cereal, peanuts and pretzels. Set aside.
Melt White Chocolate: Add the chocolate and extract to the bowl of a double boiler (SEE NOTES). Use a rubber spatula to stir constantly until the chocolate is almost fully melted – avoid overheating the chocolate as it will harden! Remove the bowl from the double boiler and continue to stir until the chocolate is completely melted and smooth in consistency.
Pour Melted Chocolate over Chex Mix: Pour the melted white chocolate over the Chex mixture. Use a rubber spatula to gently toss the mixture well until it is evenly coated and covered in chocolate.
Add M&M’s or Candy of Choice: Add both M&M’s to the white trash mixture (or whatever candy you love) and thoroughly toss until evenly combined.
Let Sweet Chex Mix Dry: Line two large baking sheets with parchment or wax paper. Spread the chocolate Chex mixture out evenly over the prepared baking sheets. Quickly sprinkle flaky salt and sprinkles all over the Chex Mix while the chocolate is still wet. Transfer to the refrigerator and chill until the chocolate is cool and set, about 20-30 minutes.
Serve White Trash Chex Mix: Break the white chex mix apart into snack size pieces and enjoy!

To make a double boiler: Gently simmer 1 to 1 1/2 inches of water in a medium saucepan. Stack a heat proof glass or metal bowl on top of the pan – making sure the bowl fits snugly on the pan and the water ISN’T touching the bottom of the bowl.
Melting Chocolate: I recommend using a double boiler to melt white chocolate. However, you can use the microwave if you are in a pinch! Set the microwave to 50% strength. Microwave for 45 seconds. Stir. Continue microwaving in 30-second increments, stirring in between, until the chocolate is mostly melted and only a few lumps remain. Remove from microwave and continue stirring until the chocolate is smooth and completely melted.
Storage: Store leftover mix in an airtight container at room temperature for 4 days or in the refrigerator for up to 2 weeks! Alternatively, Chex Mix freezes well for up to 3 months – thaw at room temperature before serving. Note on freezing: If freezing, I recommend substituting the pretzels with more cereal, nuts and candy, or using a different tasty-mix in! Pretzels don't freeze well as the moisture in the freezer will cause them to get soft and taste stale.
