Varieties of sundried tomatoes

As I mention above, there are two different varieties of sun-dried tomatoes in the grocery store – dry or oil-packed.

  • Dry-packed: Plain, or dry-packed tomatoes are sold in sealed packages. They have a texture similar to chewy dried fruit.
  • Oil-packed: Oil-packed sun dried tomatoes are sold in jars. They are dried in the same exact way as dry-packed tomatoes. However, after the tomatoes are dried out they are submerged in oil. Packing them in oil gives the tomatoes a richer, more luxurious mouthfeel!

Tomatoes for this recipe: You can use either dry- or oil-packed tomatoes in this creamy sun-dried chicken bake recipe. With that said, I recommend tomatoes in oil because they have more flavor. You will drain the tomatoes out of the oil before proceeding with this sun-dried tomato chicken recipe. Plus, you can save the sun-dried tomato oil and use in instead of regular olive oil in future recipes!

Pro-tip on sun-dried tomatoes: Oil-packed sun-dried tomatoes are sold as whole tomatoes or finely julienned pieces (thin strips). If you want to save time, I recommend using julienned sun dried tomatoes to make this basil tomato chicken bake.

How to store sun-dried tomatoes?

Unopened jars of sun-dried tomatoes should be stored in a cool, dark place in the pantry. When ready to use sun-dried tomatoes, make sure you drain them and pat off all excess oil with a paper towel before proceeding with the recipe.

How to make chicken with sun dried tomatoes

This sundried tomato basil chicken is so quick and simple to prepare! Grab your ingredients and let’s make this fool-proof chicken with dried tomato casserole dinner!

  1. Preheat oven to 400 degrees Fahrenheit. Grease the inside of a casserole dish with cooking spray or butter and set aside.
  2. Season chicken: Pat the chicken breasts dry and season generously with salt and pepper. Transfer the chicken to the casserole baking dish.
  3. Whisk together dried tomato cream sauce: In a large measuring cup, whisk together the heavy whipping cream, sour cream, garlic, sun-dried tomatoes, oregano, basil and thyme. Pour the mixture evenly over the chicken breasts. Sprinkle both the mozzarella and the parmesan cheeses evenly over top.
  4. Bake for 22-30 minutes, or until the chicken is cooked through. Optional – for more golden brown top: Switch the oven to broil during the last few minutes of baking, and broil for 2-4 minutes, or until the cheese is golden. Make sure you watch closely as the dish can go from golden to burned very quickly!!
  5. Rest: Remove the baked Sicilian chicken from the oven and tent loosely with foil. Allow the chicken with sundried tomatoes to rest for 5-10.
  6. Serve: Remove the foil and discard. Garnish the top of the chicken with fresh basil and grated parmesan, along with fresh tomatoes and red pepper flakes if using. Enjoy the baked chicken with sun dried tomatoes while warm.

The most accurate way to check your Sicilian chicken breasts for doneness is to use a digital (instant-read) thermometer. Insert the thermometer into the thickest part of the chicken breast to check the internal temperature.

Instructions

It takes about 2 minutes to do, but it makes a world of difference and your chicken will be much juicier! Just make sure you cover the chicken with plastic wrap, or put it in a zip-closure bag, and work from the center, out towards the edges of the breast, pounding gently in a downward and outward motion.

You can purchase either whole sun-dried tomatoes or save yourself a little prep time and purchase julienned sun-dried tomatoes. Just make sure you drain the tomatoes and pat them thoroughly dry to remove excess oil before proceeding with the recipe.
  3. Bake time: The amount of time needed to bake the chicken will depend on how thin you pounded your chicken and the strength of your oven. I pounded mine to about ¾’’ thick and they took approximately 23 minutes to cook (my oven is brand new and properly calibrated).
